Chicken & Sweet Potato Rogan Josh...Amazing!
As part of my New Years resolution to watch what I eat, I have decided to eat more sweet potatoes (Most nutritional vegetable on the planet so I discovered recently and still cant believe I didnt really have one until now age 35!) today I made sweet potato & chicken curry. Pretty awesome albeit when you are buying the curry paste it makes it sooo easy. Has a sourness that at first taste that is almost strange but the more you eat the more you need. Including preparation this will take you about 30mins.
What to do? As below photo fry chicken pieces (I used 4 boned chicken breats with skin removed) &1 red onion (coarsely chopped) until cooked through (7-8 mins~). Same time as chicken is cooking boil the sweet potatoes for 5-6mins until part soft & then drain & leave to stand & chop 2-3 large tomatos or 10-12 cherry tomatoes.
Now add the curry paste (Bought from City Super in Tianmu - Taipei) & cook for 1min & then add the tomatoes and cook for an additional 1-2mins with the lid on stirring once. Now add the sweet potatoes (4-5 medium size/chopped & boiled as above) and 150ml of water and cook for an additional 5mins with lid on stirring once. Finally add the 150g of spinach leaves & cook for 2 more additional minutes before serving with rice.
